When I started dreaming up summer cookie flavors, strawberries and cream immediately came to mind. Something light, fresh, and perfect for backyard barbecues, sunshine, and warm summer days.
As I worked on the recipe, the beautiful pink color kept catching my eye, and suddenly the name Pretty n' Pink popped into my head.
If you're an 80s kid like me, you probably already know why. Pretty in Pink has been my favorite movie for as long as I can remember. I thought Molly Ringwald was absolutely everything. I even spent the next 30 years trying (and failing!) to recreate her iconic bob haircut.
This cookie takes me right back to those carefree days of watching Pretty in Pink on VHS over and over again.
